Healthy Three Ingredient Cookies
What do you do when you have overripe bananas that you need to use? Make some healthy cookies of course!
These cookies are made with only three main ingredients; bananas, oatmeal, and peanut butter.
In fact, you can even make them with just TWO ingredient if you omit the peanut butter, but I mean… we’re peanut butter loves in my family, so that usually never happens 🙂
They are so simple to make. Just mash up the banana, fold in the oatmeal and peanut butter, and mix until the dough is evenly distributed.
If you want to get fancy, you can add some optional mix-ins. We love adding chocolate chips to ours. But you could also add basically anything you want; raisins, shredded coconut, mini m&m’s, sliced nuts, etc.
These cookies are also perfect for baby led weaning. When feeding to infants, I usually omit the chocolate chips.
Hope you love these cookies as much as our family does. Be sure to share what your favorite version is below in the comments!
- 1 ripe banana
- 1/2 cup quick oatmeal
- 2 tbs natural peanut butter
- (optional) chocolate chips
- Preheat oven to 350°F.
- Put oatmeal in blender or food processor and make into a finer, almost flour like consistency (optional, and not necessary but will give a smoother texture). Mash banana in bowl. Fold in oatmeal and mix together. Add peanut butter and combine until mixed thoroughly. Separate portion out and add in chocolate chips, or whatever other mix-in you'd like.
- Use a spoon to scoop dough and place on greased cookie sheet. Cookies should be about 1.5-2 inches in diameter. Bake for 10-12 minutes, or until firm and golden on the bottom. Makes about 12 cookies.
- Optional Mix-In Ideas: coconut flakes, raisins, chocolate chips, cocoa nibs, cranberries, etc.
